Swallow's nests

Swallow's nests

Presentation

Simple and delicious Sunday recipe, fantastic for making a good impression on your guests quickly and with little effort. The name of this dish comes from the appearance of the rolls of pasta that look like nests or roses. The dish can be made with any type of cheese combined with ham, mushrooms, vegetables, fish... the only limit is your imagination.

Ingredients:

  • egg pasta lasagne
  • 200g of cheese 1 (whatever you want)
  • 200g of cheese 2 (whatever you want)
  • 250g of ham
  • 570g of bechamel (500ml of milk - 35g of wheat flour - 35g of butter - salt)
  • 10g of Parmesan
  • 20g of butter
  • salt to taste
  • seed oil to taste

Preparation:

Pasta cooking and filling

Prepare a large pot with salted and boiling water where you have to add the seed oil and place a container with cold water next to it. 1 Boil the sheet of thin pasta for 15-20 (the time depends on the thickness of the pasta), then immerse it in cold water and 2 spread it delicately with your hands on a shelf covered with a kitchen towel. 3 Repeat the previous operations with 2 other sheets of pasta, positioning each sheet slightly overlapping the previous one. Evenly distribute the cheeses in flakes and the ham along three horizontal strips, so that when you cut them, the effect will be better.

nest preparation

4 Now roll it all up and repeat the whole process to make another roll. 5 Cut the two rolls each into three equal parts and proceed with the preparation of the béchamel.

6 In a small saucepan, melt the butter over medium-low heat.

prepare the bechamel

When the butter starts to foam, 7 add the flour and mix until the mixture turns nutty. 8 Now add the milk and continue mixing with a whisk until the béchamel begins to thicken. 9 When the béchamel has thickened, turn off the heat and add the salt (nutmeg can also be added).

Dish composition

10 Pour a generous amount of béchamel into a baking tray, trying to make it adhere to the sides of the tray as well. 11 Arrange the swallows' nests prepared earlier in the pan and cover them with another generous dose of béchamel. 12 Finally, add a little grated Parmesan and butter in pieces on the surface and bake for 20 minutes at 200°C or at least until the nests have a nice golden crust on the surface.

Advise

  • If you have time and desire, you can replace the ready -made pasta with homemade egg pasta , your swallow's nests will be even richer and tastier.
  • You can really put whatever you prefer in the filling, for example for a vegetarian version you can use grilled vegetables instead of ham.
